Yes, the sap is running, and now starts the ritual of boiling it down. I went out today to find the test bucket overflowing. I am boiling that full bucket, and have set five other buckets out today. Now…if nature cooperates, warm days and cold nights, I’ll be boiling every night till the buds break open and the tree frogs start singing.

The new thing that’s coming is syrup made from hickory sap. It’s supposed to be very good, also, and expensive!
